Budget Friendly Healthy Meal- Turkey Sauce and Zucchini Noodles

Easy budget friendly healthy meals are my jam!! With a hectic schedule, I don’t have a ton of time to spend in the kitchen. I need quick, fresh and nutritious meals. This recipe is one that I make often. It’s super easy and only uses 5 Ingredients (7, with olive oil and salt).

Budget Friendly Healthy Meal – Fresh Ground Turkey Sauce and zucchini noodles.

Recipe Ingredients

1lb 93% Ground Turkey

2 Medium sized zucchini

1/4 cup of diced sweet onion

2 minced garlic cloves

26oz of finely chopped tomatoes

2 tablespoons of extra virgin olive oil

Salt to Taste

 

Recipe Directions

Heat olive oil over medium heat

Add diced onions. Cook until translucent. Then add minced garlic. Cook for 1 minute.

Add 1lb of ground turkey. Cook meat through.

Then add, tomatoes. Cook over med/high heat for about 10-15 mins.

OPTIONAL: You can add any seasonings you like here…I just added himalayan salt to taste.

While your meat is cooking, prepare your zucchini noodles

Cut the ends off zucchini. Then cut zucchini in half. Place one of the halves into noodle maker and spin the handle. As far as serving sizes, I guesstimate, one zucchini per adult. Now that can be wrong but I don’t eat like a bird so I do like my meals to feel hearty.

Once you have your zucchini noodles you can serve them raw (which is what I do) or you can give them a quick stir fry with a bit of olive oil.

So there you have it. An easy and quick budget friendly meal that’s perfect to make when you have little time to cook but want to eat healthy and fresh!
