Stuffed Peppers Crock-Pot Recipe
I am always looking for ways to eat somewhat healthy and this easy stuffed peppers recipe fits the bill. The best part, you can use your crockpot to make it. Set it and forget! Yay! The perfect meal for when you have a busy day or you don’t feel like cooking later in the day.
Ingredients Needed:
- 4-6 large bell peppers (depends on the size of crockpot)
- 1lb grass-fed ground beef (I have used ground turkey too)
- 1cup finely chopped onions
- 1teaspoon salt
- 1teaspoon black pepper
- 3-4 cloves garlic, finely chopped
- 1 1/2cups cooked brown rice
- 15 oz can of diced tomato (drained)
- 1/4 cup water
- 2 tablespoons Worcestershire
- 1 1/2 cups shredded cheddar or Colby-Jack cheese divided
- 2 tablespoons of chopped parsley to garnish (optional)

- Cut tops off of bell peppers. Remove membranes and seeds. Set aside.
- In a large bowl, combine ground beef, rice, onion, tomatoes, Worcestershire, salt, pepper, and 1 cup cheese. Stir to combine.
- Spoon ground beef mixture into peppers.
- Place 1/4 cup water in the bottom of the slow cooker.
- Place stuffed peppers into the Crockpot.
- Cover and cook on Low for 6-8 hours or High for about 4 hours, until ground beef is cooked and rice is tender. About 15-30 minutes before serving, top stuffed pepper with remaining cheese, then continue cooking until cheese is melted.
- Serve warm.
