Instructions
-
Pre-heat oven to 450 degrees.
-
Spray Large Sheet Pan with non-stick cooking spray, set aside.
-
In a large bowl, add your green beans, salt, pepper, and 1 tablespoon of extra virgin olive oil. Mix well.
-
Then arrange green beans in the center of your sheet pan. Set aside. Note: You will be using the green beans as a "bed" to rest your tenderloins on later.
-
Take your half-cut potatoes and place them in the same bowl you used for green beans. Add salt, pepper, and 2 tablespoons of extra virgin olive oil. Mix well.
-
Take potatoes and lay them on either side of the green beans with the cut side down on sheet pan.
-
Take tenderloins and rest each one on the green beans. Be sure the tenderloins don't touch and have a bit of room, in between them, to cook.
-
Salt and pepper the tenderloins.
-
Brush on the hoisin sauce on both tenderloins.
-
Bake for about 25-30mins..until internal temp of pork reads 145 degrees.
-
While the pork is cooking. Take the butter, garlic, and chives and mix in a small bowl. Set aside.
-
Once the pork is cooked, remove from the oven. Pour the butter mixture evenly all over the pork, potatoes, and veggies. Set tray aside for 5-10mins.
-
Slice tenderloins and you are ready to serve.
