Healthy Low Carb Vegetarian Recipe

With the start of the new year, I am working on getting my diet and exercise in check. I know there is a ton of talk about NO CARB diets but there is NO way that is going to happen over here. Bread is life for me. It’s part of my Italian DNA. Ha!

In partnership with Thomas’ Breads, I’m sharing a healthy low carb vegetarian recipe. It’s so simple to make that you can have it as a snack or a quick meal. It’s also packed with nutrition. Best part, you can still get your carbs in your meals and feel satisfied.

Recipe Ingredients

  • 1 Thomas’ Bread Bagel Thins
  • Half of an Avocado
  • 1 Thinly sliced Radish
  • 1/4 cup of Arugula
  • 1 teaspoon of freshly squeeze lemon juice

Recipe Directions:

  • Take a Thomas’ bagel thins and separate the halves (optional: toast the bagel if you like it more crunchy and warm)
  • Take an avocado half and cut it length wise about 3 times. Creating slices that you scoop out and place on one of the Thomas’ Bagel Thins halves
  • Place arugula lettuce on top of avocado
  • Place thinly sliced radish on top of arugula
  • Squeeze fresh lemon juice over the entire thing

You can place the other half of the bagel on top OR make two snacks.

I make this recipe several times a week. Love that its super easy to make no matter how busy my schedule can get. Plus there are so many different ways you can make this with what you have in the fridge.

I’m a big believer of everything in moderation. Having a healthy balance (my focus word for 2019) is so important for your well being. And I’m always looking for ways to create that in my life. In in my food options 😉
