Delicious And Easy Stuffed Avocado Recipe For Cinco De Mayo

Stuffed Avocado Ingredients
-1lb of ground turkey (I use 93% fat-free)
-1 packet of low-sodium taco seasoning (I make my taco seasoning. Since I don’t measure anything it’s hard for me to share that recipe. Sorry friends. BUT, the low-sodium taco seasoning packet is the next best thing ;))
-1/4 of finely diced onion
-3 ripe avocados
Optional Toppings:
-Fresh or jarred Jalapenos
-Shredded Cheese
-Fresh Cilantro
-Diced Onions
-Diced Tomato
-Shredded Lettuce
-Salsa
Stuffed Avocado Cooking Directions:
- Place ground turkey and 1/4 cup of diced onions in a medium-sized frying pan. (**Alley’s Tip**- turkey can be super boring when it comes to taste. Cooking it with sweet onion helps give it more flavor)
- Cook, over medium heat, for about 3-5minutes.
- Drain the meat.
- Add taco seasoning packet and water (amount on the back of seasoning packet). Lower heat, mix meat and cover.
- Cook for an additional approx 5-7 minutes until meat is cooked.
While meat is cooking slice avocado lengthwise.
Remove the pit and scoop out a little of the avocado in each half. (**Alley’s tip**- store what you scoop out in a small glass storage container (place pit in container to help avocado fresh) and use it in your morning smoothie or protein shake.)
You want to create a crevasse in the avocado so that you can place your ground meat and toppings in it. Think of the avocado half as your “taco shell” or “boat”.
Once you have your avocado halves ready to go, place all your taco toppings into smaller bowls so they are ready to serve.
The best way to serve this dish, in my opinion, is as soon as the meat is cooked place it into the avocado. The warmth of the meat will “melt” the inside of the avocado slightly.
