Easy Red Moscato Blackberry and Goat Cheese Crostini Appetizer
Posted June 2020/ Updated Feb 2024
One of my favorite things to do is go to a farm to pick your own. My favorite is when it’s strawberry and also blackberry season. There is something so magical about escaping the hustle and bustle of Houston to being outdoors. The sun, fresh air, and just walking through a farm does something to me internally.
There is also the other part about being on a farm that transports me to when I was a kid growing up in Connecticut. My parents would always take me to local farms to pick fresh produce. My mom has always been an incredible cook and I don’t have a single memory of her serving our family anything she didn’t make from scratch. She has always understood the importance of fresh ingredients.
So here is a Red Moscato Blackberry and Goat Cheese Crostini recipe that is easy to make. Uses a few ingredients and looks super fancy when you serve it. Hope you love it as much as I do.
Red Moscato Blackberry and Goat Cheese Crostini
Ingredients
- 1 4oz log style goat cheese (unflavored)
- 1 baguette
- 36 blackberries (washed and dried)
- 1 2oz mascarpone cheese
- 1 bunch fresh minced mint OR fresh chives (washed and dried)
- 1 a drizzle of fresh local honey
- 1 tbsp extra virgin olive oil
- 1 heavy cream (as needed)
- 1 bottle red moscato wine or blackberry wine
Instructions
Prepping blackberries
-
Take your washed and dried blackberries and place them in a bowl. Pour red moscato or blackberry wine over them and cover the bowl. Place in the fridge overnight.
How to make crostini
-
Cut the baguette into 3/4-1″ slices. Place bread slices on a baking sheet and brush slices with olive oil. Place bread under the broiler and broil for 3-5 minutes. Keep a very watchful eye on them since they can burn easily. You can toast both sides or just do one side if you prefer one side to be chewier. Remove toasts from the oven and set aside.
How to make goat cheese spread
-
In a medium-size bowl place the goat cheese and mascarpone cheese. Using a hand blender, mash the ingredients together. If you feel it's not blending well add a tablespoon of heavy cream. Mix until well combined.
Assembling your crostini for serving
-
Spread a generous amount of goat cheese on each crostini. Add minced fresh herb (either mint or chives). Then top each with 1-3 blackberries and drizzle honey on each crostini. Place finished crostini on a serving platter.
Recipe Notes
Extra Tips:
*You can prep everything the day before and assemble everything when guests arrive.
*If you have extra spread you can use in a sandwich or omelet. None will go to waste 🙂
*If goat cheese isn’t your style you can use cream cheese instead.
*Always use fresh herbs. Dried ones won’t give this recipe the taste it needs. Plus dried herbs can also change the color of our spread
